Achaari Broccoli is made by marinating garden fresh broccoli in mustard and pickle. This marinated broccoli is then grilled in the tandoor. Half a cup of water is boiled with half teaspoon of salt and then broccoli is added and cooked for 3 minutes. Remove the water and use it later as it is full of nutrients. All the achaars are tempered. Oil is heated in a pan and all achaars are added. Onion is added after a minute and cooled till light brown. Salt, dhaniya powder, turmeric and chilli powder are then added. Lauki is added after stirring it for a few seconds. Add half a cup of that nutrient filled water to lauki after stirring it for 2 minutes. Cover the pan and cook it for 10 minutes ensuring that lauki holds its shape. Sprinkle dry mango powder and add broccoli along with tomatoes. Mix well and cook for 4 minutes. Fantastic! You have just cooked a tangy Achaari Broccoli that can be served with rotis or rice. Palak Patte Ki Chaat is another savory Small Plate dish made from crispy spinach leaves, sweet yoghurt, tamarind and mint chutney. Mix rice flour, salt, turmeric powder, besan, red chili powder, carom seeds, lemon juice and ginger-garlic paste in a bowl. Prepare a smooth batter by adding water and whisking it. Oil is heated in frying pan and spinach leaf is dipped one at a time into the batter and excess batter is shaken off. Fry it until crisp and golden and drain onto kitchen napkin and keep it. This is Palak Patta Pakora. Now, arrange fried palak patta pakoras on serving plates and sprinkle chopped onions. Then drizzle with whisked yoghurt, green coriander chutney and tamarind chutney. We can use various types of vegetables for mix pakoras including capsicum, carrots, beans, cabbage and cauliflower. The taste of mix veg pakoras depend on the vegetables used. This dish tastes excellent with tomato sauce or mint-coriander chutney. First of all, mix veg pakora batter is prepared by rinsing all vegetables in clean water. These vegetables are then peeled and chopped into a mixing bowl. Green chilies, onions and ginger are chopped and added into the bowl. Add spices and salt into the bowl and mix everything. Then add and mix half cup of besan and leave it for 5 minutes. Add water in parts and mix to get a thick batter. Oil is heated in the frying pan and portions of batter are dropped in the oil. These batter portions are fried on a medium flame until golden by flipping the sides. Continue frying till these pakoras are crisp and golden. Take these pakoras out of the frying pan and drain these on kitchen napkins. Similarly, fry a large number of mix pakoras in batches and serve with tomato sauce or any other chutney.
