We offer a tasty appetizer by the name of Dahi Kabab that is prepared by filling deep fried crispy bread dumpling with spicy yoghurt. The ingredients used in this popular North Indian snack are cheese, hung curd, spices and flour. These are liked by people due to the soft inner part and crispy outer surface. This appetizer is usually served with mint kabab chutney or green chutney. Hung curd is prepared by placing a clean muslin cloth over a sieve, pouring the curd and bringing the edges of cloth together. Then cloth is wrung to drain up excess whey from curd. A heavy object is placed on the curd pack and refrigerated for 14 hours. Dahi Kabab is prepared by crumbling cheese and mixing it with hung curd in a bowl. Non-sticky dough is made by adding other ingredients and mixing. Equal sized balls are made of the dough and flattened. These balls are then rolled in besan or any other flour and shaken off gently to remove excess flour. These balls are then kept aside for 7 minutes. Dahi Kabab is then set to fry by firstly heating the oil and dropping the kababs one after the other. Continue frying on a medium flame and flip to the other side when one side turns golden. Similarly, fry all the kababs until these are golden and crisp. That’s all you have to do to prepare Dahi Kabab! Now serve it hot with mint chutney or green chutney. We offer Veg Seekh Kabab as another tasty appetizer that is prepared by lancing mixed vegetables with spices on a seekh and roasting in the tandoor. Our chefs use various vegetables including peas, potatoes and organic soya granules to make veg seekh kabab. Green peas and sweet potatoes are boiled and soya is soaked in hot water to soften it. After some time, excess water is taken out from the soya. Soya is then rinsed with cold water twice to remove excess water. We can pulse them in a mixer to make coarse granules if using chunks. The flour is dry roasted until it turns aromatic. Vegetables are mashed and mixed with soya and ginger garlic paste. Dough is prepared by mixing all the other ingredients except oil and besan can be added to dough so that it is not sticky or breaking up. Dough is divided into 9 equal portions and rolled on skewers of 4 inches long. Grease the grill pan and heat it. Place the dough portions and grill. Rotate the portions every 7 minutes and grill until these are cooked. These should not be flipped until cooked to avoid sticking to the pan. Place a slice of onion on the grill when these are half cooked for a smoky flavor. Increase the flame to maximum and grill for few minutes when the kababs are golden. That’s it! You have prepared a delicious Veg Seekh Kabab that can be served with mint chutney, onion and lemon wedges.
